Not everyone can afford to take mom out to a fancy $50 dinner on Mother’s Day. I know I can’t. But I still want her to feel like a million bucks. May 9 is the special date this year and I’m going to take a simpler approach, with flowers, a book of poems and breakfast in bed.

My mom makes some mean mashed potatoes, stuffing and lasagna. Of course, those are all dishes that require a little more skill than I have. Breakfast in bed is the route I’m going. There are a few other directions you can go in on Mother’s Day.

There’s my favorite: the cute breakfast in bed. This works best if there are children to help. My sister and brother will be helping me with the waffles. It’s a way for us to show our love for mom, and feel like we’re all chipping in.

There’s the hearty family dinner, filled with dishes that look like they’re fit for a queen. The whole family can relax with a fun comedy movie after, like Meet the Parents.

Seared Salmon with Orange Glaze

Low Fat Cinnamon Sour Cream Coffee Cake

Finally, there’s the light brunch. If your mom is on a health kick, help her out with a few low-cal dishes. Make sure to get her flowers too.

Curious as to how Mother’s Day came about? It wasn’t always a Hallmark holiday.

Anna Jarvis has been hailed as the founder of Mother’s Day. After her mother passed away, Jarvis felt that mothers should be honored on their very own holiday. She lobbied for the official declaration of a “Mother’s Day.” President Woodrow Wilson signed a joint resolution declaring every second Sunday of May as Mother’s Day in 1914. Even though Jarvis is the “mother” of Mother’s Day, she actually never got married or became a mother herself.

Since then we’ve been celebrating moms all over the world. Various countries have their own dates to celebrate mothers, but one thing remains constant. We all recognize the importance of honoring our mothers, and everything they’ve done for us.

Here’s a lovely poem for mothers that I found for mom. “To My Mother” is written by Robert Louis Stevenson:

“You too, my mother, read my rhymes
For love of unforgotten times,
And you may chance to hear once more
The little feet along the floor.”
